Voodoo is essentially shamanism. Simple sacrifice, scrying through entrails and so forth. The more macabre notions of human sacrifice and summoning the christian devil came about as a result of the influence of papist missionary's. The goal being to convince the offspring of slaves taken from west Africa that following their cultural heritage would lead to eternal damnation.

If you want a Voodoo character try a shamanistic cleric

RPG.net allows you to download PDFs of all these various resources for a small cost. I'm sure there's other less legal means via Bit Torrent etc, but that's where I when I've got a creative idea and wish to find out more about background/history stuff or otherwise...
