Is there any way the big tents could have the top set to second level, or even make some topless tents? I love to use the tents, but they kind of suck to stand inside of..

No, not how you're describing. You can make new structures with multiple PLCs and sort of approximate something like an open-top tent, though. It's about the best we can do.
