Apart from the info here (http://forgottenrealms.wikia.com/wiki/Shadow), is there any more information available over the internet on Shadows?

Also, is it possible for a Shadow to take a form other than humanoid? What holds a Shadow 'together' in the sense that they appear as vaguely humanoid beings?

Most traditional shadows are of humanoid creatures. It's DM prerogative if shadows can take any other forms (although in my opinion, undead that create spawn from their attacks can look like anything).

I'm not aware of any other resources for information about shadows that are (legally) available over the internet, other than PDF scans of the source books. You might try Libris Mortis...? Or go ahead and ask specific questions like you did.
