The deer ignore your attacks because they're not set to hostile, but you can't really do this yourself. It will make lots of NPCs hostile to you char, and that's a bit annoying. Don't attack NPCs (meaning the deer) without DM supervision.
As for doors and such, there are doors that you're just not meant to get through, yup. Yet again - ask a DM in game to try out new methods on opening doors.

You don't wanna hit NPC's, expecially some with AI
I once accidentally nicked the DM's Black Caravan character NPC guard with a wyrmling breath weapon [shifter] and, because of it trigginger a hit and 0 dmg, I was set hostile to nearly -all- NPC's.
I was a bit worried after reset when I walked into Bendir and the ENTIRE millitia was Hostile.
Don't do it mate, don't do it! And be glad they're not scripted to Hostile -and- agressively attack.

Yeaaah setting a deer to hostile would definitely mess up your life NPC wise. Go for just roleplaying killing a deer?
And hope no druids are watching.

Yeah, as long as those druids are lacking in the balls department, you might get some reactions.

Many doors don't actually go anywhere.

Yarp. Computer games are stuffed full of doors that are just painted onto the wall. It's how you know we're not all in a Matrix style simulation - if we were about 95% of the doors in the world would just be dummies that never opened.

Maybe they are... how many people try to open every door they pass?

O.O
Now you've got me paranoid... *Eyes his neighbors' doors suspiciously*

As said, those are part of the scenery. Consider the deer as furniture. If you want to fun a deer, a DM can spawn you one to kill. Just watch for the forest hippies... They're a bit more aggressive than PETA.

I was under the impression that NWN was not resident evil with the doors *cannot open door, is blocked by sheets of paper on the floor...or, door is jammed from the otherside, on both sides.*
I suppose its all mechanical stuff, I thought there was a simpler way to set certain animals to switch on attack without making every npc hostile, arn't there group settings in toolset? im not very adept with the toolset mind i'm more 3d shooter mapping oriented
Personally though, I'd say DnD does not have unbreakable doors ever, just real difficult ones with evil traps and ones with mouths that ask you a riddle, or even a door thats stuck and a portcullis comes down behind you trapping you between each, never just unopenable, defeats the point of having a theif in the party

That would require the animals to have AI, and we don't have AI for those idly-standing NPCs for performance reasons.
But why would you want to open a door that leads nowhere? You'd just see an empty black space there and couldn't go in. We can't possibly have a room or a house behind every scenery door, for the module size would go up and there'd be less space for other things. We also can't remove the door frames. They are an automatic feature of most of the tiles with houses.
I think it'd break the immersion far more than an unbreakable door, if you'd bash it and see the ugly limits of the world. There's rarely IC explanation for the limits of the world in this sense, but there's always an explanation for not being able to break the door: it's just too well-built. Maybe the farmers got sick of the level 30 robbers breaking in and ordered some special doors from Mystra's?

I'd be more concerned about the frequent places where there's a line on the ground that you're incapable of crossing beyond which all the scenery is perfectly monotonous for as far as the eyes can see.

Yeah, that's another irritation. Very little can be done about it, though, except to give every area borders or forest/rock/whatever is available in the toolset. Not all areas have an option to fix that.
