So I've been looking into the Fey lately, and I'm noticing that it's very difficult to find a decent list of actual creatures. There's a bunch of very informative topics that list their restrictions and diets and habits and politics and so on, but the critters themselves are pretty hard to pin down.
The 3.5 monster manual only lists dryads, nymphs, satyrs and sprites, which I know aren't all of them. They're all non-evil, for one. The online SRD list pretty much the same, with the addition of hoary hunters/steeds and leShay. The Forgotten Realms wiki has a bunch, but a lot of them seem to have been retconned into being fey in 4E, such as hags and lamia (who on the face of it look like they'd fit right in with the Unseelie, so I hope that counts here too). What I'm wondering is, which creatures count as Titania/Queenie's-Seal-of-Approval True Fey on Amia?

Check the 3rd Edition Fiend Folio, and Monster Manuals 3, 4, and 5. There's about another two dozen fey races described in those sources. Kelpies, spriggans, glaistigs, verdant princes, jaebrin, lots of interesting stuff.

Well, the main problem is that I keep finding conflicting information on which fey are actually fey. For example, the Fiend Folio lists Shadar-Kai as fey, but the D&D wiki lists them as outsiders. Then there's the aforementioned thing with hags and lamia and half of the other creatures listed as fey on the FR wiki, and it's all a bit jumbled.

Generally speaking, ignore everything you find online. D&D online, FRWiki, all of it. It's all garbled with homebrew and 4th Ed stuff that will just serve to confuse, since almost none of it cites its sources. Whatever you're finding in WotC printed 3rd Ed and 3.5 Ed books is the stuff that Amia acknowledges, overriding all else.

The wiki uses 4ed and likely 5ed stuff soon, so it's best to not use those but specifically the books etc, built for 3.0/3.5 edition. This link has a list of a fair amount of the fey though, that we have to be picked from - from there you can look up information on ones that catch your fancy. (It does link to an IC posting mind, so don't take everything within as certain fact. But the list of fey names is useful certainly to see what types do exist - and their are more than just those. Tons of fey from real folk lore have stolen, so you could easily just look their to get idea's too)

Perhaps not those specific ones, but many have been. Or the fundamental idea behind them taken and twisted.

Is there any good sourcebook/any source for fey lore? How the Courts work, Cruxes and so forth?

The complete guide to fey is pretty much cannon for amia, some of the info from which we have in our lore section.
