Just tested with the AC ioun stone. 49 ac with stone out and visible, 49 without the stone. AC unchanged from what it was before I got the thing.

Visual effect is still there. I assume ioun stones should still work when shifted like this.

Dragons don't get haste AC either, because I believe their dodge AC is maxed out (20 dodge AC). Dusty Rose ioun stone is likely dodge AC, hence no benefit.
